  • 2 large ripe yellow plantains
  • 1 pinch of salt

Instructions

  1. Prepare the plantains:
    Peel the plantains and cut each one into four equal pieces. Place the pieces in a bowl.
  2. Season:
    Add salt and lightly spray with coconut oil. Massage the plantains gently to coat evenly.
  3. Air fry:
    Preheat your air fryer to 205°C (400°F). Place the plantain pieces in the basket and cook for 16 minutes, flipping halfway through.
  4. Preheat the waffle maker:
    Heat according to the manufacturer’s instructions. Spray the plates with a little coconut oil.
  5. Flatten and cook:
    Place one piece of cooked plantain in the waffle maker. Close firmly to flatten (you can use a clean towel to protect your hands).
    Cook for 3–5 minutes, or until golden and crisp. Keep warm and repeat with remaining pieces.

Tip

No air fryer? You can microwave the plantains instead!

Place the pieces in a bowl with a splash of water, cover lightly, and microwave for 5 minutes until tender.
