Turkey

• 1 whole turkey, 4 kg (about 4 ½ lb)

• 1 lemon

• 60 ml (¼ cup) vinegar

• 90 ml (6 tbsp) Haitian marinade (see recipe on page 188 or your preferred blend)

• 15 ml (1 tbsp) paprika

• 60 ml (¼ cup) olive oil

• Salt & pepper to taste

Vegetables

  • 1 sliced onion
  • 3 carrots, cut into chunks
  • 3 celery stalks, cut into chunks
  • 4 medium potatoes, halved
  • 250 ml (1 cup) chicken broth
  • 1 bay leaf
  • 4 sprigs fresh thyme

Instructions

1. Preheat the oven

Preheat your oven to 190°C (375°F).

2. Prepare the lemon

Cut the lemon in half and squeeze the juice into a bowl.

Keep both lemon halves — you’ll need them to clean the turkey.

3. Clean the turkey (optional)

Place the turkey in a large bowl.

Pour vinegar over it and rub with the squeezed lemon halves.

Rinse and pat dry with paper towels. (Skip if you don’t clean meat.)

4. Make the seasoning mix

In the bowl with the lemon juice, add:

• Haitian marinade

• Paprika

• Olive oil

Season with salt and pepper.

Brush this flavorful oil mixture all over the turkey.

5. Assemble the roasting dish

Place the turkey in a baking dish.

Scatter onion, carrots, celery, and potatoes around it.

Add:

• Remaining marinade

• Chicken broth

• Bay leaf

• Thyme

6. Roast the turkey
