How to Make Whipped Cream Krumkake

1. Make the Batter

Beat eggs in a bowl until very light. Gradually add sugar, beating to blend. Slowly mix in melted butter, whipped cream, and nutmeg. Add the flour and mix until combined.

Dough will resemble cookie dough. Chill thoroughly.

2. Prepare the Krumkake Iron

Preheat the krumkake plates over medium heat for 10 minutes, or until a drop of water dances when it hits the surface. Brush plates lightly with sweet butter.

Place 1 tablespoon dough in the center of the lower plate, close the iron, and press handles together. Trim excess dough with a table knife.

3. Bake the Krumkake

Bake for 30 seconds, flip the iron, and bake another 30 seconds.

Remove carefully and immediately roll over a cone-shaped form.

Place seam side down on parchment to cool fully. Remove form once set.

4. Fill & Serve

Fill cooled cones with sweetened whipped cream if desired.

Serve immediately for the crispiest texture.

Storage + Make-Ahead Tips

  • Store unfilled krumkake in an airtight container up to 5 days
  • Do not fill until serving—cream softens the shell
  • Freeze plain krumkake cones up to 2 months
  • Re-crisp in a warm oven (250°F) for 3–4 minutes if needed

Recipe Notes

  • Dough Texture:
The batter should be thick—more like cookie dough than pancake batter. If it feels too soft, chill it longer.
  • Chilling Is Key:
A cold dough prevents spreading and helps create clean, crisp patterns on the krumkake plates.
  • Heat Control:
Medium heat works best. Too hot and they brown too quickly; too low and they won’t crisp.
  • Use a Light Touch With Butter:
Brush or dab the iron lightly; too much butter makes the krumkake greasy and patchy.
  • Work Quickly When Rolling:
Krumkake becomes firm fast. Roll immediately off the iron for perfect cones.
  • Prevent Sogginess:
Only fill with whipped cream right before serving. Filled krumkake soften within minutes.
  • Flavor Variations:
Add cinnamon, cardamom, vanilla, orange zest, or almond extract for different holiday twists.
